Small cakes from mould cheese Encian


2 pieces of mould ceese Encian, 50g of butter, 50g of ham, 1 clove of garlic, salt, two slices of pineapple, fried almond bucks, or chopped monkey-nuts as decoration



Preparation method

Cut cheeses and all that is inside put out with a spoon. Scramble cheese, butter, together with ham and garlic sliced to small pieces. Put salt at need. Fill bowls of cheese with filling, put it together and give it to get cold. Cut filled cheese to six pieces, do the same with slice of pineapple. Put pieces of pineapple on  cheese and sprinkle with almonds or nuts.

Cheese crumpets


200 g grated cheese,  250 g flour,  20 g yeast,  400 ml Nitrianske fresh semi-skimmed milk,  2 eggs,  pinch of salt,  oil for frying



Preparation method

Make dough with the tepid milk, salt, yeast and flour; add the egg yolks and leave to rise for 20 minutes in a warm place. Mix the grated cheese and beaten egg whites into the dough, stir gently and fry the small crumpets in a greased pan. Serve hot with vegetable salad.

Advice and tips from houswife 

The milk does not become sour and will stay sweet, even for several days, if you add a horseradish leaf.

Potato pastry with mould cheese Encian


1 encian cheese with seasoning, 250g of unbleached flour, 250g of boiled potatoes, 40g of amylum, 70g of vegetable fat, 1 egg, 2 teaspoons of baking powder, salt, egg for covering, caraway for sprinkle



Preparation method

Mix flour with amylum and baking powder in a bowl, add roughly grated encian cheese with seasoning, grated potatoes (cook potatoes day before), chopped fat to cubes, egg, salt and knead semi-solid dough. Roll the dough on floured tablet max to 4 mm, slice off small shapes, put them on oiled metal plate, cover with beat eggs, sprinle with caraway and bake. Bake for 15 minutes with with 180 °C.

Bundt cake


350 g plain flour,  300 g icing sugar,  500 ml Nitrianska soured milk,  100 ml oil,  2 tsp bicarbonate of soda,  pinch of salt,  cocoa



Preparation method

Mix all the ingredients together, pour half of the mixture into the bundt mould. Add cocoa to the other half and then add to the mould. Bake slowly in a preheated oven. When ready, turn out. When cool, top with chocolate topping or sprinkle with icing sugar.

Chicken cutlet with mould cheese


2 mould ceeses Rival, 4 chicken cutlets, 4 soupspoons of oil, 1 teaspoon of dried salvia or 4 fresh leaves of salvia, black pepper, salt, 4 medium tomatoes, 150g of mushrooms, 1 teaspoon of lemon juice



Preparation method

Beat chicken cutlets, cover with oil, add salt, pepper, swprinkle with salvia and put them to cold to stay there for an hour. Meantime prepare tomatoes and mushrooms. Steam tomatoes in hot water, cool them off, scuff and cut them into quarters. Clean mushrooms, cut them into quarters, put them into salt boiled water, add lemon juice and cook for 2 minutes. Drain and leave them to cool down. Cut cheese lengthwise to slices. Cutlets sear on oil, put them into frying an covered with baking paper, seathe with potatoes and mushrooms, cover with pieces of cheese and bake for 10 minutes with temperatre 230 °C. Serve with rice and lots of vegetable.
